So many of my clients complain of the challenges inherent in having a nutritious lunch. And so many of them find it difficult to carve out the time to make something healthy to bring with them to work. In today’s video I am going to show you how to make an amazing nori roll that is packed with mineral and antioxidant-rich vegetables, complex carbohydrates from brown rice and iodine-rich nori sheets, made of seaweed.
I love sushi! And so do many of my clients. Sushi is so popular in NYC you’d think it originated here rather than in Japan. But sushi can sometimes contain extra ingredients, such as sugar, that enhances flavor but is also adding unnecessary calories to your meal. This recipe is made with only fresh ingredients and no additives, making it clean fuel that is good for you!

It tells the tale of Jiro Ono, an 85 year-old Japanese man that has been making sushi out of his tiny restaurant located in the basement of a subway station in Japan. His is the only Sushi restaurant to be honored with three stars from the prestigious Michelin Guide and is so revered it attracts notable culinary names such as Eric Ripert of Le Bernadin and Anthony Bourdain. If you love sushi and are moved by a singular dedication that can lead to astounding success, you will not want to miss Jiro Dreams of Sushi. It is so stunningly shot, that I swear, the night that I saw it, I dreamed of Jiro’s sushi.

Nori Hand Rolls
- Toasted Nori Sheets
- 2-3 cups cooked brown rice
- Avocado, sliced thin
- Julienned carrots
- Julienned cucumber
- Scallions, sliced thin
- Cilantro leaves
- Tamari (gluten-free)
- Sesame oil
For the sauce: Blend 4 tablespoons of gluten-free tamari with ½ teaspoon of sesame oil (or to taste preference). For the rolls: Lay Nori sheet on a clean surface, rough side up. Place ¼ cup rice in a diagonally on bottom right corner of sheet, leaving about ½ inch of space in the lower right hand corner. Top with choice of fillers. Roll by tucking in the lower right corner first, then roll the nori into a tight cone. Seal the nori by dabbing some water onto the nori. Dip nori roll into sauce and enjoy!
